Instructions: Heat oil in lge pan. Add onion & bacon, cook until onion is soft, add potatoes, stir over heat for 5 mins or until potatoes just begin to soften, add peas, cook, stirring for 2 mins. Combine potato mixture with eggs, parsley & salt & pepper in bowl. Pour into greased dish. Cook in mod oven 30 mins.
