3 x baking potatoes
4 x garlic cloves
1/2 x onion diced
1/2 cup water
3 tbl soy sauce
Instructions:
Instructions: Peel the potatoes and cut them into 3/4-inch cubes. Place them with the whole garlic cloves and onion in a medium pot. Combine the water, soy sauce and sugar, stirring until the sugar dissolves. Bring to a boil. Reduce the heat, cover partially and simmer until the liquid starts to evaporate and the potatoes get slightly tender, about 10 to 15 minutes, stirring occasionally to keep the potatoes from sticking to the bottom.

If there is too much liquid, simmer uncovered an additional 5 or so minutes, until the liquid is reduced and thick. Do not overcook or over-stir the potatoes or they will lose their shape. Remove the pot from the heat while the potatoes are still slightly hard; they will continue to cook away from the heat. Serve warm or chilled.

This recipe yields 8 to 10 servings.
