4 cup grated raw potatoes drained
2 med onions grated, divided use
4 x eggs beaten, divided use
1/4 cup flour
Salt and pepper to taste divided use
Cooking oil
1/2 cup ham cubed
1/2 cup broccoli flowerets cooked
1 cup light cream
1 cup grated cheddar or Swiss cheese
Instructions:
Instructions: Mix potatoes, one grated onion, one egg, flour, salt and pepper. Form crust in a 10-inch pie pan. Brush with oil. Bake 20 minutes at 400 degrees.

Place one grated onion, ham and broccoli in cooked potato shell. Whip the remaining three eggs and cream together. Blend in salt, pepper and paprika to taste. Pour over ingredients in shell. Bake at 350 degrees for 30-40 minutes, or until custard is set. Remove from oven and sprinkle with more paprika and grated cheese. Make 6-8 servings.

Bobbie Says: This is much more hearty than most recipes for quiche. The potato shell adds a wonderful texture and flavor to the dish.
