Ingredients:

2 cup mashed potatoes
2 tbl sour cream
(or sour half-and-half)
1/2 tsp onion powder
1/8 tsp nutmeg
4 x eggs
1/2 tsp salt
1/8 tsp freshly-ground black pepper
2 tbl grated cheese
(Cheddar, Jack or mixture)
Instructions:
Instructions: In a medium bowl, mix potatoes, sour cream, onion powder and nutmeg.

Grease 4 custard cups and place 1/2 cup mashed potato mixture in the bottom of each. Make a well in the center, break an egg into each well and sprinkle with salt, pepper, cheese and paprika.

Place custard cups on a cookie sheet for ease in handling and bake in a 400 degree oven for 10 minutes or until eggs are set as desired.

This recipe yields 4 servings.

Variations:
o Use instant mashed potatoes prepared according to package directions.

o For richer tasting potatoes, add 2 tablespoons cream cheese to hot mashed potatoes.
