I make this in a deep thick foil dish and I make it parve (on the off-chance that there might be some left over !)

Peel and grate (or process) the potatoes and leave them to drain so that all the starch drains off. Meanwhile, chop the onion finely then mix them together.

Put the oil into the dish and place in the hot oven whilst you are mixing the rest of the ingredients. Add the eggs and salt and pepper to the potato and onion mixture and then add the flour and mix well. Pour the hot oil into the mixture and stir. Put the mixture back into the dish (from which youve just poured the oil) and cook for up to an hour in a medium oven until just brown on the top. Freeze when cool and bring out of the freezer, wrapped in foil, to heat up from frozen.
