Ingredients:
Amount Ingredient
2 tbl Olive oil
25 gm Butter, (1oz)
250 gm Lamb stir-fry
500 gm Punnet Anya potatoes, cooked, refreshed and sliced into 2cm (1 inch) pieces
50 gm Cubed pancetta, (2oz)
125 ml Dry white wine, (4fl oz)
1 x 50 grams who black pitted olives, (2oz)
4 x Sundried tomatoes sliced into 2cm, (1 inch) pieces
Instructions:
Instructions: In a wok or large frying pan, heat the olive oil and butter until hot.

Saute the lamb, sliced potatoes and pancetta for 4-5 minutes, then pour over the white wine. Add the pitted olives, sundried tomatoes and fresh thyme and saute for a further 1-2 minutes.

Remove from the heat and serve immediately.

NOTES : A one pan dish comprising of saute potatoes, pancetta, lamb, tomatoes, olives and fresh herbs.An ideal lunchtime snack or main meal!
