Instructions: In a wok or large frying pan, heat the olive oil and butter until hot.
Saute the lamb, sliced potatoes and pancetta for 4-5 minutes, then pour over the white wine. Add the pitted olives, sundried tomatoes and fresh thyme and saute for a further 1-2 minutes. Remove from the heat and serve immediately. NOTES : A one pan dish comprising of saute potatoes, pancetta, lamb, tomatoes, olives and fresh herbs.An ideal lunchtime snack or main meal!
