Instructions: In a 10-inch skillet, cook onion in 1 Tbsp. of the butter. Drain onion, reserving drippings in skillet. Combine onion, mashed potatoes, and egg. Shape into six 3-inch patties. Dip in flour. Add the remaining 3 Tbsp. butter or margerine to skillet. Heat over medium heat. Add potato patties and cook about 5 minutes on each side, until brown.
