Instructions: Dice bacon, prunes and raisins.
Fry the bacon in a small amount of butter for about 3 minutes, drain well and set aside. Peel and grate the potatoes and squeeze well to remove any liquid. Place in a bowl with the prunes, raisins, bacon and flour and mix to combine, season well. Heat the butter in a heavy frying pan and add potato mixture, pressing down to form a sort of thick, round pancake. Allow to cook slowly for about 10 minutes, until well browned, making sure the bottom doesnt burn, then turn over and cook the other side, as you would a pancake.
