Instructions: Rinse and drain the potatoes but do not peel them. Put them in a large saucepan. Add cold water to cover and bring to the boil. Simmer for about 20 minutes, or until tender. You can also cook in the microwave if desired.
Allow to cool. You can peel the potatoes at this point if you want. Hard boil eggs, 10 minutes. Dice onions and capsicum. Slice spring onions. Cut the potatoes into 2cm dice and put in a bowl with the remaining ingredients. Stir gently. Garnish with segments of boiled egg. Email this Recipe:
