Instructions: 1. Cook potatoes in large pan of boiling water just until they can easily be pierced with tip of a sharp knife, 8 to 12 minutes. Drain. When they are cool enough to handle but still hot, cut in half and place in a large bowl. Toss with vinegar, salt and pepper and set aside to cool.
2. Mix yogurt, mayonnaise and mustard in a small dish. Add to potatoes along with herbs and mix lightly. Add additional salt and pepper to taste. Serve or chill until serving time. Preparation Time: 10 minutes Cooking Time: 8-12 minutes Yield: 8 servings. Email this Recipe:
