10 med potatoes (about 3 pounds)
1 tsp salt
1/2 tsp freshly ground black pepper
1/3 cup white wine vinegar
1 tsp dry mustard
3/4 cup olive oil
1/4 cup mayonnaise
1/2 lb ham (2 slices cut 1/4-inch thick)
6 x gherkins, well drained
Instructions:
Instructions: Cook potatoes in boiling water until tender. Drain well and run under cold water to stop the cooking. Cut into 1-inch cubes.

Combine salt, pepper, vinegar, mustard and oil and toss with warm potatoes.

Allow to marinate at room temperature or in the refrigerator for a few hours.

Add mayonnaise to potatoes. slice ham into thin julienne strips about 1 1/2 inches in length. Cut gherkins into julienne strips. Combine ham and gherkins with potatoes and sprinkle with chives. Serve cold or at room temperature.
