Instructions: Cook potatoes in boiling water until tender. Drain well and run under cold water to stop the cooking. Cut into 1-inch cubes.
Combine salt, pepper, vinegar, mustard and oil and toss with warm potatoes. Allow to marinate at room temperature or in the refrigerator for a few hours. Add mayonnaise to potatoes. slice ham into thin julienne strips about 1 1/2 inches in length. Cut gherkins into julienne strips. Combine ham and gherkins with potatoes and sprinkle with chives.
