Instructions: Peel and cook the potatoes in boiling salted water until tender. Drain well and allow to cool slighty. Cut into 2 cm dice and leave to cool in a bowl.
Hard boil eggs, 10 minutes. Peel and roughly chop. Dice onions and capsicum. Mix together the mayonnaise, curry paste, tomato sauce and yoghurt and pour over the potatoes. Add the onion, capsicum and egg and toss lightly until well coated. Email this Recipe:
