Instructions: In medium, heavy, non-stick skillet, cook onion in oil 5 minutes, stirring occasionally. Add potatoes and celery and cook 5 minutes more. Stir in mixed vegetables, salt, paaprika and pepper. cover and cook 20 minutes, stirring occasionally and spearating frozen vegetables. In cup, mix cornstarch with 1/3 cup cold water. Gradually add to vegetable mixture; cook, stirring constantly, until thickened.
