Instructions: Line baking sheet with paper towels
In a bowl, mix eggs, flour, baking powder , salt, pepper and the nutmeg. Add onions. Shred potatoes and zucchini, stir into egg mixture. Heat a 1/4 cup oil in a 12" skillet over medium heat. Drop potato mixture, 1/4 cup at a time, into hot oil, flatten into 3" rounds. Cook until golden brown, around 3 minutes on each side, adding more oil if necessary. Remove to baking sheet.
