Instructions: Peel the potatoes and cut into large chunks. Peel quarter and core the apples.

Put together in a saucepan with about 25mm water.

Cover and bring to the boil on the boiling plateand boil for 1 minute.

Drain and replace the lid.

Transfer to the simmering ovenfor about an hour or until the potatoes are soft enough to mash.

Drain off any excess moisture and mash the apples and potatoes with butter until smooth. Season with salt and pepper.

Grate a redskinned apple leaving the skin on and fold into the mash.

This gives an attractive appearance.

This is a favourite mashed potato recipe to go with sausages and pork.
