Instructions: Preheat oven to 350-F degrees. Chop or slice onions. Heat butter in a heavy saucepan or frying pan; saute onions, then add flour. Stir over medium heat until the flour is cooked but not browned; then stir in sour cream, milk, cheese, salt, pepper, and parsley (reserving a little of the parsley to go on top of the finished dish).
Place a layer of about half the sliced potatoes on the bottom of a buttered casserole dish or in individual ramekins. Top potato layer with the eggs and sausage, then with half of the cream sauce. Finish up with the rest of the potatoes and sauce. Slide into the oven and bake for about 20 minutes, or until heated through and invitingly fragrant. Email this Recipe:
