Instructions: Wash the potatoes well and boil them. When done, remove them to the side to cool. Peel and dice them.
Meanwhile, in a mixing bowl, prepare the tahini sauce by blending the tahini with garlic, lemon juice and water, beating continuously with a wooden spoon, until the sauce becomes creamy and smooth. Pour the tahini over the potatoes in a deep bowl and garish with chopped parsley. Cuisine: "Middle East" Interlink" NOTES : Judging by the recipe in the book, this dish is heavily sauced and tart: 1 cup tahini plus 4 cups lemon juice. We prefer more vegetable to sauce. Keep the 1:4 proportion tahini to juice, and give everyone 1 tablespoon of the delightful tahini. For a little kick, garnish with a pinch of red pepper flakes. This tastes better warmed.
