Instructions: Heat nonstick 8" skillet over medium-high heat. Brush with some of butter. Working quickly, arrange about 1/4 of potatoes, overlapping slightly, in concentric circles in skillet. Brush with some of butter; sprinkle with some of rosemary, thyme, salt and pepper. Repeat layering with remaining potatoes, butter, rosemary, thyme, salt and pepper to create three more layers. Cover; reduce heat to medium. Cook, shaking pan occasionally to loosen, until potatoes are tender and browned on bottom, about 30 minutes.
Loosen potatoes with spatula, if necessary. Carefully invert onto serving platter. Sprinkle with parsley. Email this Recipe:
