Instructions: Wipe the potatoes and cut them into chunks.
Heat the duck fat in a shallow pan then put in the potatoes. Season generously with salt and continue cooking for about 10 minutes over a moderate heat before turning. Lower the heat and cook for a further 30 minutes turning from time to time so that they crisp on all sides. When they are almost done stir in the sliced garlic and parsley and season with a little black pepper. Serves 2 as a side dish Email this Recipe:
