Instructions: Bring a large saucepan of water to a boil. Prick the sausages all over and blanch them five to seven minutes to remove excess fat. Remove from the water.
If the sausage is in large links, cut into smaller portions. Remove the stems, cores and seeds from the bell peppers and cut them into 1 inch pieces. Cut the onion into 1 inch pieces. Cut the potatoes into 1 inch cubes. Pile the vegetables into a shallow casserole dish large enough to hold all the ingredients. Drizzle the oil over the vegetables and toss to coat. Sprinkle with salt and pepper and place the sausage pieces on top. Bake 30 minutes, stirring several times during baking until the potatoes are tender and the sausage is cooked through.
