Recipe for Potatoes Roasted in Duck Fat with Fried Onions Garlic and Rocket

1 kg waxy potatoes peeled and cut into 1cm cubes
5 tbl duck or goose fat
1 lrg onion sliced
2 clv garlic finely chopped
Instructions:
Instructions: Rinse the potatoes well and pat very dry.

Warm 4 tbsp of duck fat in a large shallow frying pan.

Add the potatoes season and turn the heat up to medium.

Poach in the hot fat tuming frequently for about 10 minutes.

Tum the heat up to full power and continue tuming the potatoes until golden and crunchy.

Meanwhile in a separate pan fry the onions in the remaining tbsp of duck fat until golden brown and season.

Drain the fat from the onions and potatoes.

Toss together in the potato pan with the garlic over a medium heat for 30 seconds.

Throw in the rocket stir quickly and serve.

This makes delicious supper with a poached egg on top. You can buy duck fat by mail order from the Hereford Duck Co call 01981 570-767.
