Instructions: Peel and devein the prawns.
Dice tomatoes. Slice spring onions. Heat 1/2 of the oil in a frying pan and add the garlic. Cook breifly. Add the tomatoes, chilli and ginger. Cook gently for 2 minutes. Set aside and keep warm. Heat the remaining tablespoon of oil in a nonstick frying pan and add the prawns and ground pepper. Saute over high heat for 1 minute on each side. Add the spring onions. Blend well, cooking for 1 minute. Place the prawns over the tomato mixture and serve. Email this Recipe:
