Instructions: Preheat the grill.
Season each scallop with olive oil and Emerils Essence. Grill each scallop for 2 to 3 minutes on each side. Remove from the grill and allow to cool. Wrap the sides of each scallop with the Prosciutto. Pile the Melon Relish in the center of the plate. Arrange the scallops around the relish. Garnish with fried arugula, black pepper and parsley.
