Ingredients:

2 tsp capers, chopped
1/4 cup pitted ripe olives, chopped
8 x sun-dried tomatoes, chopped
1 x (2-oz.) can anchovies, drained and chopped
Juice of 2 lemons
2 x garlic cloves, crushed
1/3 cup olive oil
1/4 cup chopped fresh parsley
Salt
Freshly ground pepper
4 x pork loin chops, each weighing 6 oz
Instructions:
Instructions: Mix together capers, olives, tomatoes, anchovies and lemon juice. Add garlic, all but 1 tablespoon of olive oil, parsley, salt and pepper.

Heat remaining oil in a flameproof casserole dish. Add chops and cook 10 minutes on each side, until cooked through.

Pour tomato mixture over chops and bring to a boil. Simmer 5 minutes. Garnish with basil sprigs and serve.

Serves 4
