Heres a quick and easy way to make use of Italian prune plums.
2 lb Italian prune plums, pitted and quartered
1/2 tsp ground cinnamon
1/4 cup lemon juice
3/4 cup firmly packed dark brown sugar
1/2 cup all-purpose flour
Pinch salt
4 tbl cold unsalted butter, cut into bits (1/2 stick, see note)
Whipped cream or ice cream (optional)
Instructions:
Instructions: Butter a shallow 1-quart baking dish and arrange plums in bottom. Sprinkle with cinnamon and lemon juice.

Combine sugar, flour and salt. Blend in butter with a fork until mixture becomes granular. Sprinkle over plums. Bake for about 30 minutes, until topping browns well and plums are tender.

Serve warm with lightly whipped cream or ice cream, if desired.

Note: Use real butter or stick margarine. Do not substitute reduced-fat spreads; their higher water content often yields less-satisfactory results.
