Instructions: If you prefer to keep your kitchen steam free or want to cook more than one pudding cook them in the oven. Set the pudding in a high sided roasting tin half fill with boiling water then cover with a tent of double thickness foil crimping around the edges to seal tightly. Cook in the oven at 100C/325F/Gas Mark 3 for the same cooking time. Check halfway through the cooking in case the water needs topping up.

When it comes to serving leave the puddings to cool for about 10 minutes before turning them on to a serving plate.

For the plain and white chocolate pudding choose a really goodquality dark cooking chocolate such as Valrhona for the best flavour. Check the label and go for one that has at least 55% cocoa solids.
