3/4 cup Egg Beaters 99% egg substitute
3/4 cup evaporated skimmed milk
3/4 cup pumpkin puree pure, solid pack
1/4 cup light brown sugar loosely measured
1 tsp vanilla
Instructions:
Instructions: BREAD PUDDING: Beat together egg substitute, milk, pumpkin, brown sugar and vanilla in a medium bowl. Add pieces of leftover, very dry flaky biscuits like Pillsburys Grands. Pour into an 8x8-inch Pyrex baking dish.

Bake at 350 degrees for approximately 20 minutes, then test; continue baking for about 5 mins. until the center tests done.

Cool, cover and chill 24 hours before serving. Takes like pudding with chunks to me but Bob liked it.
