Instructions: Cream sugar and margarine at medium speed of an electric mixer until light and fluffy. Add pumpkin and egg; beat well. Combine flour and next 6 ingredients; add to creamed mixture, mixing well. Drop dough by heaping tablespoons 2 inches apart onto cookie sheets coated with cooking spray.
Flatten tops slightly. Bake at 350 for 18 minutes or until lightly browned. Remove from pans; cool on wire racks. Yield: 28 cookies (serving size: 2 cookies). Email this Recipe:
