Instructions: Fry an onion in a dollop of oil in a non-stick pot. Add some curry (to taste), fry a little more. Add raw pumpkin, peeled and cut in chunks. Fry a
little more. Add skim milk (enough to just cover the pumpkin) and salt. Cover, cook until the pumpkin is tender. Puree until smooth, correct the seasoning, serve. Very tasty. Sorry for the lack of precise quantities, I made this up the other night as I had some beautiful pumpkin sitting in the fridge. Email this Recipe:
