2 cup Canned Pumpkin
1 cup Sugar
2 x Eggs
1/2 cup Flour
1 tsp Vanilla
1/2 tsp Salt
a pinch of Baking Soda
1/2 stk Butter or Margarine
1 can (12 oz) Evaporated Milk (NOT sweetened condensed)

1/4 cup Sugar
Instructions:
Instructions: Mix all pudding ingredients except butter. Melt butter in a casserole dish, add pumpkin mixture. Mix together 1/4 Cup sugar and 1 teaspoon cinnamon and sprinkle on top. (If desired, you may also sprinkle 1/4 Cup of chopped nuts such as walnuts or pecans on top before baking). Bake at 450 degrees for 20 to 30 minutes or until firm.
