Instructions: Preheat oven to 350 degrees.
In a 2 cup measuring cup, put the 1/4 cup orange juice and 1 cup raisins. Heat them for one minute in the microwave. Stir as the raisins plump up. Drain off the remaining orange juice and set aside.
In your mixer, beat together the pumpkin, sugar, orange juice, eggs and softened butter until well blended. Remove mixing bowl from the mixer stand. Add the dry ingredients all at once, stirring quickly by hand until they are moistened. Add the walnuts and raisins and stir quickly until combined. Place the mixture into 2 foil loaf pans, 4x8 inches, which have been lightly greased and floured. Bake in oven for about 45 to 50 minutes or until a cake tester inserted in the center comes out clean.
Makes two 8-inch loaves.
