6 x Shallots, peeled and chopped
2 tbl unsalted butter
1/2 cup chicken broth
1/2 cup canned pumpkin
1 cup light cream
1/4 tsp freshly ground nutmeg
4 tbl grated Parmesan cheese (Plus: extra for sprinkling each dish)
1/2 tsp dry mustard
Freshly ground black pepper to taste
Salt to taste (optional)
Instructions:
Instructions: In a large saucepan, cook the shallots in the butter until soft. Add the broth and simmer. Stir in the pumpkin, cream, and grated Parmesan. Reduce the heat to a simmer, and add the nutmeg, mustard, pepper, and salt. Continue to cook over low heat for about 25 minutes. Meanwhile, cook pasta. Toss pasta with sauce and serve.
