Instructions: Heat oven to 400 . Grease bottoms only of 12 muffin cups or line with paper baking cups. In medium bowl, combine egg, milk, pumpkin and oil; mix well. Lightly spoon flour into measuring cup; level off. Stir in remaining ingredients except cream cheese just until dry ingredients are moistened. Batter will be lumpy. Fill prepared muffin cups about half full (reserve remaining batter). Divide cream cheese into 12 equal pieces. Place 1 piece on batter in each cup; top with reserved batter filling each cup about 3/4 full. Combine topping ingredients; mix well.
Sprinkle topping evenly over each muffin. Bake at 400 for 18 to 22 minutes. Serve hot. Email this Recipe:
