1/2 lrg or 1 small pumpkin
Instructions:
Instructions: Cut the pumpkin into eight large wedges then remove the seeds and fibres.

Place in a roasting tin cut side up and drizzle over about 3 tbsp oil.

Season well then roast in a preheated oven (200C/400F/Gas Mark 6) for 45-50 minutes or until the flesh is soft.

You can peel the pumpkin before roasting if you like but the skin helps to keep the flesh intact. Wipe the skin well with a damp cloth before cutting.

Serves 8
