FOR THE CHORIZO ----------------
1 tbl olive oil
1/2 sm white onion, minced
1/2 lb ground turkey
1/4 lb lean pork loin, ground
1 x clove garlic, diced
1 tbl New Mexico red chile powder
1/2 tsp ground oregano
1/2 tsp ground cumin
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 tbl distilled white vinegar
----------------- FOR THE CANAPES ----------------
2 cup pumpkin puree (you can use canned unsweetened pumpkin)
24 x pastry shells, 2 inches in diameter

Instructions: To make the chorizo:
Heat the oil in a frying pan and saute the onion for 3 to 4 minutes. Add the turkey, pork, and garlic and saute 3 to 4 more minutes. Add the rest of the ingredients and cook until the meat is lightly browned and crumbly Pour off any excess fat.

To make the canapes:
Mix the pumpkin with the cooked chorizo and heat until warmed through.

Spoon into pastry shells and place on heated platter or in a hot chafing dish. Garnish with cilantro leaves and serve warm.

SERVING SUGGESTIONS: Serve for a Thanksgiving or Christmas buffet. These go beautifully with hot spiced apple cider.
