This makes a perfect canvas for a splash of rum and a sprinkling of ginger,
the artful creation at world-famed Ernas Elderberry House in Oakhurst, at the
southern entry to Yosemite National Park.
1/2 lb sweet potatoes, washed
6 tbl softened butter
1 tbl light rum
2 tsp grated fresh ginger
1/4 cup heavy cream
Instructions:
Instructions: Bake potatoes (in skins) at 400 degrees for 50 minutes, or until tender. Peel and mash with butter and rum. Stir in ginger.

Turn into a saucepan over medium-low heat, stirring frequently to let most of the moisture evaporate from potatoes. Stir in cream. Add salt and pepper to taste.
