Instructions: Preheat oven to 400 F.
Sprinkle the salt and black pepper on the beets and place in a deep baking pan. Cover the beets with the water and bake, covered, for 1 hour 30 minutes, or until the beets are tender.
Peel the hot beets under cool, running water. In a food processor, combine the beets and remaining ingredients and process until smooth. In a large saucepan, heat the beet mixture until heated through. Serve immediately.
