Instructions: Spray a med. saucepan with nonstick cooking spray. Add the cabbage, onion, carrot, shallot, and garlic. Cover and cook over med-low heat for about 5 mins., or until the vegetables soften. Add the chicken broth, salt, and pepper. Bring to a simmer and cook, partially covered, for about 20 mins., until the vegetables are very tender.
