5 lb tomatoes peeled and diced
3/4 cup sugar
1 cup raisins
1 cup cider vinegar
3 tbl ginger
2 tbl salt
4 lrg clv garlic -- minced
1 tbl crushed red chile
Instructions:
Instructions: Combine all ingredients in large heavy saucepan. Bring to a boil, lower heat, and simmer uncovered, stirring often, until very thick, about 2 hours. Ladle into hot sterilized 1/2- or 1-pint jars and seal tightly. Process jars in boiling water bath for 15 minutes. Cool. Store in refrigerator or freezer.
