Instructions: This sounds like a great filling for quesadillas. I mix up a similar black bean mixture and heat it in the microwave (I dont use rice, but I should try it; also, I use taco seasoning to give it Mexican flavor). Then I lay a tortilla in a cooking-sprayed frying pan, sprinkle a small amount of shredded cheese, top with black bean mixture, sprinkle a little cheese, then top with another tortilla. Heat for a few minutes on one side, then flip and heat on the other side.
Bring tomatoes, beans, corn, and spices to a boil. Stir in rice and return to boil. Reduce heat, cover and simmer 5 minutes. Remove from heat and let stand 5 minutes covered. Servings: 2 - 4 Email this Recipe:
