2 cup Health Rising Flour*, see recipe

Instructions: *You can substitute Self Rising Flour.

Preheat oven to 500F.

In a medium bowl mix the flour & buttermilk. The dough will still look moist. Remove from bowl with a spatula & place on a floured surface.

Sprinkle with more flour on top. Flatten with your hands.

Remember: Biscuits are shy. The more you fuss over them, the less they rise. For the lightest biscuits possible, mix with just a few strokes & dont knead them.

Cut biscuits with a cutter or a drinking glass & place on a nonstick cookie sheet. Bake for 8 minutes. As with all fat free recipes, dont overbake or the biscuits will get tough.

Makes 13 fat-free biscuits.
