2 cup unbleached all-purpose flour

1 cup whole wheat or white wheat flour
leveled but not sifted
1 tsp salt
1/4 cup warm water, (120 degrees)
1/4 oz rapid-rising active dry yeast
1 tbl honey

Instructions: Makes 1 loaf. VEGAN (HONEY)

This bread gives quick results, using in about half the time of a standard recipe because of fast-rising yeast, which requires water that is quite warm to the touch to get it started. Use an instant-read thermometer until you get the feel of it. It is mixed, kneaded and allowed to rise in the same bowl. The resulting loaf makes great toast and sandwiches.

In large bowl, combine flours and salt; whisk to mix. In separate bowl, add warm water and sprinkle yeast over surface. Whisk to dissolve. Add honey; stir to dissolve. Add to flour mixture all at once.

With sturdy wooden or stainless steel spoon stir and mix until dough comes together in a ball. Using lightly floured buds, knead bread in same bowl, turning and folding, 5 minutes. Cover with clean, wet tea towel that has been wrung almost dry. Let rise in warm (85 degrees) place 45 minutes.

Punch down, knead briefly. Turn out on lightly floured board. Shape into loaf.

Place in nonstick loaf pan. Cover with damp towel. Let rise until doubled in bulk, about 45 minutes, or until depression made by pressing thumb gently into dough remains and does not spring back.

Preheat oven to 400 degrees. Slash top diagonally in three places about 1/4 inch deep with straight-edge razor blade or sharp knife. Bake 35 to 40 minutes: turn out on wire rack to cool.

Makes 1 loaf.
