Instructions: Heat olive oil in a large nonstick skillet over medium-high heat. Add bell pepper and garlic; saute 5 minutes or until tender. Add broth, salt, pepper, and saffron; bring to boil. Add rice; cover, reduce heat to low, and simmer 15 minutes. Add peas and shrimp; simmer an additional 5 minutes or until shrimp are done. Add olives; fluff with a fork.
