1 lrg clv garlic
8 slc ciabatta
8 x the ripest reddest tomatoes seeded and chopped
1 tbl finely chopped shallot or onion 3 tbsp fruity olive oil
1 x salt and freshly ground black pepper

Cut the garlic and rub the cut surface over the ciabatta slices.

Place the bread on a baking sheet and dry in the simmering ovenfor 30 minutes.

Crush the same garlic over the tomatoes then add the onion and olive oil with a little salt and pepper and leave to marinade while the ciabatta is in the simmering oven.

Stir in the basil then pile the tomatoes on to the ciabatta slices.

Bake the bruschottas quickly in the roasting ovenfor 10 minutes then serve immediately.

A romantically mediterranean version of an old favourite grilled tomatoes on toast! For a slightly more substantial feast top the tomatoes with thin slices of mozzarella just before baking then drizzle the cheese with olive oil before serving. Chopped olives capers or mushrooms can be added to the basic marinated tomatoes for a more original bruschetta.
