Instructions: The easiest way to cook fresh beets is to wash them, cut off the tops and root and throw them into a large pot of cold water. Bring it to a boil and let it simmer, uncovered, until the beets are fork-tender (it will depend on
the size of the beets). When theyre tender and still warm, you can peel them easily under cold running water - the skins just slide off. You can leave them whole and keep them in some of the cooking liquid in the refrigerator until youre ready to use them. The only recipe I have for beets is for a quick sweet & sour. Take a cup of the cooking liquid, add 1/2 to 3/4 cup vinegar (depends on your taste), and sugar or sugar substitute (also to your own taste). Bring this to a boil and add some sliced beets. Cover, and remove from heat. Let the beets marinate in this liquid for as long as you like. I also throw in a dried, crushed jalapeno pepper for extra zing. Serve cold. Email this Recipe:
