Instructions: Instant Grits (or Oatmeal) and Bagels - Hallelujah! Quaker Instant Grits Country Bacon Flavor is vegan! The "bacon" is actually soy protein. If you like grits, check these out - theyre fast and hearty. For those of you who are afraid of the grit, :-) try instant oatmeal. Bagels are a great breakfast staple, especially with an all-fruit jam. Almost instant.

Whole Wheat Pancakes with Soysage - Aunt Jemima hooks you up! Her whole wheat pancake mix is vegan if you substitute soy milk and EnerG Egg Replacer for the milk & eggs during the preparation. While youre dealing with the flapjacks, cook up some soysage - Gimme Lean is particularly good, and fat-free if you cook it with PAM. Preparation time = approximately 20 minutes.

Tabbouleh or Hummus on Pita - Both of Mediterranean origin, tabbouleh is a bulgar wheat salad, and hummus is a chickpea and tahini (sesame paste) spread. You can usually buy these prepared, or there are several kinds of mixes available. My advice? Prepare tabbouleh from a mix (such as Fantastic Foods or Near East), but buy prepared hummus unless youre going to make it from scratch - the prepared hummus mixes are usually too dry and nasty. Spread either or both (yum!) inside pita pockets, add sprouts or lettuce and chopped tomatoes, and voila! Instant, easy lunch.

Pasta Salad - whip this up at the beginning of the week, and feed off it for days. Cook some interesting shells or rotini according to package directions. Drain and toss with low-fat Italian dressing and fresh, cut veggies: broccoli, tomatoes, cucumbers, zucchini, mushrooms, sun-dried tomatoes, artichoke hearts, etc. Experiment! Season with any salad-seasoning mix (like McCormicks) or your favorite spices and chill.

Vegetable Soup - chop up all your leftover veggies, add a few cans of tomatoes with the juice, a bay leaf or two plus any spices (oregano, basil), and several cups of water to a large stock pot. Cover and simmer for an hour or two. I like to add a few bags of frozen vegetables, which are already chopped and ready to go.
