Instructions: Cook fettuccine according to package directions in a 3 -quart saucepan; drain and keep warm. Saute green onions and garlic in hot oil in a skillet over medium heat until tender. Add ginger and mushrooms; saute 2 minutes. Stir in cilantro and fettuccine. Whisk together soy sauce, broth and cornstarch until smooth. Pour over fettuccine mixture. Bring to a boil, stirring often; cook just until thickened.
Yield: 6 servings. This is a simple recipe for Lo Mein, but not sure if it is easy enough! It could be used as a side dish with a Chinese meal. Or as an entree with just a salad and crusty bread. You could add chicken to this dish by sauteeing chicken breast chunks before starting vegetables, set it aside, keeping warm and stir it in at the last minute or two. Email this Recipe:
