Ingredients:
Amount Ingredient
2 tbl olive oil
1 med onion, chopped
2 x ribs of celery, chopped
1 x green bell pepper, seeded and chopped
2 clv garlic, minced
1 lb smoked sausage, sliced on the diagonal into 1/4 inch chunks
(I use skinless smoked sausage)
1 can blackeyed peas, with liquid
1 x 14 oz. can diced tomatoes
1 x 14 oz. can diced tomatoes with green chilies (Rotel, ie.)
2 tbl Worcestershire sauce (to taste)
Instructions:
Instructions: Saute the vegetables in the olive oil in a deep skillet. When the vegetables are just tender, add the smoked sausage slices, blackeyed peas, tomatoes, and Worcestershire sauce. Let simmer for 15-20 minutes.

Serve over hot rice.

Note: The blackeyed peas can be substituted with other beans, or omitted entirely.
