vegetable cooking spray
2/3 cup nonfat buttermilk
1/2 cup whole wheat flour about 12 oz
1/2 cup cornmeal
1 tsp salt
1 tsp baking soda
Instructions:
Instructions: Preheat the oven to 325. Grease an 8x4 inch or 9x5 inch loaf pan. Mix together the dry ingredients. Stir the molasses into the buttermilk. Whisk the liquid into the dry ingredients, then pour into the loaf pan. Bake until firm and a toothpick inserted in the center comes out clean, about an hour. Cool for 15 minutes before removing from pan.

Variations:
Lighter Whole Wheat Bread

Use 1 1/2 cups each whole wheat and all purpose flour. Omit the cornmeal. Beat 1 egg into the wet ingredients.

Whole Wheat Bread with Sweet Milk

Use regular milk and substitute 2 tbsp baking powder for the baking soda. Beat an egg into the wet ingredients.

NOTES : Kristin:The flavor of this bread depends on the molasses. Use one you like. The cornmeal gives this bread a nice texture. If you dont have buttermilk you can use plain yogurt. Or you can warm 1 1/2 cups milk and add 2 tbps white vinegar. Let is rest for a few minutes before using.
