8 oz low-fat smoked sausage cut 1/4" slices
1 sm onion diced
1 x celery rib diced
1 lrg green bell pepper cut thin strips
2 x garlic cloves minced
1 can diced tomatoes with garlic,
basil, and oregano - (14 1/2 oz)
1 can fat-free chicken broth - (14 oz)
3/4 tsp Creole seasoning
1/8 tsp ground red pepper (1/8 to 1/2)
3/4 cup uncooked long-grain rice
Instructions:
Instructions: Saute smoked sausage in a large nonstick skillet over medium-high heat 3 to 4 minutes or until browned. Add onion and next 3 ingredients; saute 2 to 3 minutes.

Add tomatoes and next 3 ingredients. Bring to a boil, and stir in rice; cover, reduce heat to low, and simmer 15 to 20 minutes or until liquid is absorbed. Stir in shrimp; cook 3 to 5 minutes or just until shrimp turn pink.

This recipe yields 4 servings.
